Yellow Bean Salad
Serves 6

Yellow Bean Salad

6 lb of Los Angeles Salad Company Yellow Wax Beans
2 1/2 cups of cherry or grape tomatoes
1 cup of mushrooms, cut in half or quarters, depending on size
1/2 cup of Italian salad dressing
salt and pepper to taste

1. Cut the corner of the bag of yellow beans and microwave about 2 1/2 minutes on each side, until tender crisp. Plunge in a bowl of ice water to stop the cooking process and remove heat from them.
2. Drain the water and dry the beans with a paper towel or clean dish towel.
3. Add tomatoes, mushrooms, dressing, salt and pepper, then toss to mix.
