Sugar Snap Peas with Bacon and Onions

Serves 4

Sugar Snap Peas with Bacon and Onions


Ingredients
1 lb (1/2 bag) of Los Angeles Salad Company Sugar Snap Peas
4 slices of thick-cut bacon, cut into small perpendicular strips
1 yellow onion, diced
1/3 cup of water
salt and pepper to taste

Directions
1. Brown bacon strips over medium-high heat, in a large skillet, about 5 to 6 minutes. Remove bacon and set aside, on a plate lined with a paper towel. Do not discard the bacon fat from the skillet.
2. Add the onions to the skillet and sauté for about 2 minutes. Add salt and pepper to taste.
3. Toss in the sugar snap peas and pour the water. Cover and simmer for about 4 minutes, until most of the water has evaporated.
4. Remove from heat, and add cooked bacon strips. Toss to distribute evenly and serve.
