Bean Medley Salad
Serves 2

Bean Medley Salad

8oz of Los Angeles Salad Company Bean Medley or French Beans
1 tbsp of olive oil
1 tbsp of red wine vinegar
1 tsp of grainy mustard
2 tbsp of finely chopped fresh oregano
1 tbsp of freshly squeezed lemon juice

half a red onion, thinly sliced
salt and pepper to taste


1. Cut the corner of the bag of beans and microwave for 2 to 3 minutes, until tender, then open bag and plunge the beans in a bowl of ice water, to stop the cooking process. Leave in cold water for about 5 minutes, until there's no more heat coming from the beans. Drain the water and pat the beans dry.
2. In a medium-large bowl, combine the oil, vinegar, mustard, oregano and lemon juice, and mix well.
3. Toss the bean medley or French beans and red onion with the dressing mixture until evenly coated.
4. Add salt, pepper, lemon juice and serve.
